avocado soup with biltong

2 large, ripe avo’s, mashed
1tsp butter or margerine
1tsp of flour
2 cups of chicken stock
2 cups of milk
A dash Tabasco Sauce (optional)
Sliced biltong and chopped parsley to serve
Peel, stone and mash the avocados, adding a little lemon juice to stop them from browning. Melt butter in a large saucepan, stir in flour to make a paste. Add chicken stock bit by bit, stirring to prevent the paste from forming lumps. Add the milk and stir. When milk has been heated, add mashed avocado and stir well. Season to taste with salt, pepper and Tabasco. Do not let the avocado boil as this will make it bitter! Give the soup a quick whirl with a hand-mixer to get it smooth and creamy. Dice some biltong (about a tablespoon per serving of soup) into small blocks, chop some fresh parsley and sprinkle on each bowl of soup before serving. Serves 4 to 6 people.

biltong soup

Half a cup of butter
2 beef stock cubes
2 tsp coarsely ground black pepper
Half teaspoon whole nutmeg, grated
Half teaspoon freshly ground coriander
1 cup of cake flour
2 cups of milk
8 cups of boiling water
1 cup of coarsely grated Cheddar cheese
200 g of finely sliced moist Beef Biltong
Cream and Port to taste
100g grated blue cheese
Bread Sticks for serving
Melt the butter in a heavy-based saucepan.
Crumble the stock cubes and add the spices.
Add flour and heat, stirring continually until the flour begins to melt & simmer.
Mix in the milk and boiling water, and slowly stir into the flour mixture.
Stirring continually, heat slowly over medium heat until the mixture begins to simmer and thicken.
Remove the soup from the heat and stir in the Cheddar cheese and half the Biltong.
Do not bring the mixture to boil again.
Keep warm until ready to serve.
Stir in a little fresh cream and port just before serving if desired.
Dish into soup bowls and scatter a little of the remaining Biltong and crumbled blue cheese on top.
Serve with bread sticks.

biltong muffins

120 g Whole-wheat flour
120 g Cake flour
200 g Biltong - finely chopped
50 g Cheddar Cheese
30 ml Baking powder
3 Eggs
200 ml Milk
100 ml Cooking oil
15 ml Lemon juice
Combine all the ingredients and mix lightly. Spoon into greased muffin pans and bake at 220° C for 11 minutes. Leave to cool slightly before removing and serving with butter. Serves 10 people.

biltong braai broodjies

Sprinkle Biltong Poeier op ‘n sny wit brood, voeg by 'n paar snye kaas en tamatie. Gooi bietjie peper oor en sit nog 'n sny op om toebroodjie te maak. Smeer buite kante van toebroodjie met botter/margarien sodat die brood nie te vinnig brand nie en plaas op 'n rooster oor matige kole. Draai die broodjies totdat albei kante goudbruin is en sit dadelik voor.

biltong en kaas skons

100g gerasperde Cheddarkaas
150g gerasperde biltong
420g koekmeelblom
15g bakpoeier
120ml melk
35ml botter/margarien
3ml Bovril
1 eier
Sif alle droe bestanddele saam, behalwe kaas en biltong. Vryf botter in die meelmengsel totdat dit korrelrig is. Voeg kaas en biltong by. Klits Bovril, eier en melk saam en sny die mengsel met 'n mes in die bottermengsel in. Rol die deeg uit in die verlangde dikte en sny in vierkante. Plaas effens van mekaar op 'n gesmeerde bakplaat en bak by 220C vir +/- 12-15 minute. Bedien met botter terwyl dit nog warm is.

biltong pate

(serves 4-6) 200g Button Mushrooms, thinly sliced
1 small Onion, chopped
50g Butter
100g Beef Biltong, finely grated
250g Cream Cheese
250g Whipping Cream, lightly whipped
I Instructions
Melt the butter in a frying pan; add the mushrooms and onions and sauté until soft.
Set aside and allow cooling completely.
Once cold, place the onion mixture in a food processor together with the rest of the ingredients and blend well.
To serve - Garnish with watercress and wafer-thin slices of Biltong.
Serve with crackers or thin slices of fresh bread

biltong spread

125 g Smooth Cream Cheese with Chives
2 tblsp Mayonnaise
2 tblsp Lemon Juice
4 tblsp grated Biltong
Salt & freshly ground Black Pepper to taste
Mix all the ingredients together.
Excellent on toast or a snack-witch.

biltong, kaas en uit potbrood

500g bruismeel
1 blik bier
1½ koppie gerasperde Cheddar Kaas
250ml gekerfde (nat!) bees biltong
125ml fyn, bruingebraaide uie
Meng die meel en bier goed saam. Voeg 1 koppie kaas, die biltong en uie by en meng alles saam. Plaas dit in ‘n gesmeerde pot en bedek met die res van die kaas. Bak tot gaar. Toets met ‘n mes of totdat die onderkant hol klink. Eet warm met botter en konfyt

biltong bread

500g Self Raising Flour
1 Packet of White or Brown Onion Soup (Dry)
250g Cheddar Cheese
350g Sliced Biltong
500 ml “Karring Melk” (Buttermilk)
Mix all ingredients together
Put in Bread Pan
Bake at 180C for 40 min or till dry inside

biltong & avocado salad

200 g Beef Biltong (thinly sliced)
1 packet mixed lettuce salad leaves
1 large, avocado (peeled and diced)
250 g cocktail tomatoes (halved)
1 cucumber (sliced)
50 g feta cheese (diced)
50 g pitted black olives
125 ml salad dressing of your choice
Rinse salad leaves and drain thoroughly. In a large salad bowl, add lettuce leaves, biltong, diced avocado, cocktail tomatoes, cucumber, feta cheese and olives. Toss together and refrigerate. Before serving, sprinkle dressing over salad.

biltong & braai sampioene

Groot bruin sampioene en verwyder die steel.
Meng knoffel en botter saam en sit dit in sampioene.
Strooi biltong poeier bo-oor en bedek met gerasperde kaas.
Maak gaar op 'n rooster oor stadige kole.
Laat die botter smelt en die sampioen van binne af gaar maak voordat die buitekant van die sampioene brand.

potato salad with biltong

1 kg Potatoes, boiled until just tender
250 g Sliced Beef Biltong
2 onions, chopped
125 g button mushrooms, sliced
1 green pepper, seeded and chopped
100ml mayonnaise
100 ml sour cream
100 g Cheddar cheese, grated
3 eggs, boiled and mashed
30 ml chutney
Salt & freshly ground black pepper to taste
5 ml dried or 15 ml chopped fresh parsley
Skin and slice the potatoes
Fry the onions, mushrooms and green pepper in oil until onions are transparent
Scatter over the potato slices along with the Biltong
Mix the dressing ingredients and stir into the potatoes.
Serve hot or cold.

biltong and pasta potjie

500g biltong
500g pasta skulpies
2 groot uie - fyngesny
2 rooi en 1 groen soetrissie - gekap
250ml room
500ml vleisektrak
400g gerasperde kaas
sout en peper na smaak
Braai uie en rissies in pot met olie. Voeg vleisektrak en noedels by. Kook tot pasta gaar en water weggekook het. Voeg room, biltong en kaas by. Roer deur en kook vir ± 5 minute.

biltong pot

(With Mushrooms and Kernal Corn) 4 Large Onions
500g Mushrooms
1 kg Biltong
3 Tins Kernal Corn (or 'sweet corn')
500 g Noodles (Cooked)
1 Green Pepper
500 ml Fresh Cream
2 Cups Cheddar Cheese
Fry onions, green pepper en mushrooms.
Add Biltong – Mix well.
Add Noodles and Corn.
Add Cream and mix well.
Sprinkle cheese on top and close lid
Keep pot on low heat till cheese is melted

kleyn begin bread roll

Buy already made “Vetkoekdeeg” from your bakery or chain store (enough to make 2 loaves)
2 big Onions – finely chopped
2 Table Spoons crushed Garlic
6 Table Spoons Margarine
150g Mozzarella Cheese – grated
150g Cheddar Cheese - grated
500g Beef Biltong - carved
250g Bacon - chopped
Keep the ready made dough in plastic bag and microwave on Defrost for 1 – 2 min.
Take it out of the plastic bag and knead (about 7 min). Divide into 2 equal pieces. Roll out rectangular.
Mix Margarine and Garlic together. Spread equally over the 2 pieces.
Now place the finely chopped Onion, lightly fried Bacon, Mozzarella Cheese, Biltong and finally the grated cheddar cheese over the two pieces of dough. Roll up like bread and fold in the sides. Press dough firmly together to seal the top.
Bake in greased oven proof bread pan or dish.
Bake for 1 hour at 180ºC
